National Park Week

Welcome back! I'm so glad you stopped by today. I hope you had a great weekend and got to play a little. We had some terrible storms in our area on Saturday evening. Tornadoes touched down in a few surroundings counties, but none where we live.

This week is National Park Week and that means that hundreds of national parks are waiving their parking and entry fees. Look up or call your local national park to find out if they are participating in the program. I know a lot of people have spring break this week, so it would be a fun activity to do with the kids. Our local parks (actually three of them) are participating. I think I may take the kids at least one day this week.

This week's menu:
  • Monday- leftover roast beef, potatoes, carrots, etc. I may have salad as well.
  • Tuesday- manwich and french fries.
  • Wednesday- evening church.
  • Thursday- chicken and broccoli Alfredo and salad.
  • Friday- pizza.
  • Saturday- hamburgers on the grill with potato and onion foil packets.
  • Sunday- Easter! Turkey breast, mashed potatoes, mac and cheese, and corn.
Recipe of the week:
  • Chicken and broccoli Alfredo
What you will need:
1/2 of a pkg. of linguine
1 cup frozen broccoli
2 Tbsp. butter
4 skinless, boneless chicken breast halves, cut into 1-1/2 in. pieces
1 can cream of mushroom soup
1/2 cup milk
1/2 cup grated Parmesan cheese
ground black pepper to taste

Instructions:
Prepare linguine according to package directions. Add broccoli during last 4 minutes of the cooking time. Drain the linguine mixture well.
Heat the butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through.
Stir the soup, milk, cheese, and pepper and linguine mixture in the skillet. Cook mixture until hot and bubbling, stirring often. Serve with additional Parmesan cheese.

Activities for the week:
  • Monday and Tuesday- home with the kids, cleaning, and playing with the kids.
  • Wednesday- evening church.
  • Thursday- MOPS in the morning.
  • Friday- home with the kids, cleaning, and playing with the kids.
  • Saturday- Arbonne party at my house.
  • Sunday- Easter service at church, then egg hunt at my sister-in-law's church with the kids.
