The menu is back....

Scripture of the day: "Seek the LORD and His strength; seek His presence continually!" -1 Chronicles 16:11


I have not done a menu in two weeks and I have felt lost. We have been "winging it" and spending way more money than usual on food. So, it's back and I am feeling happy and more at peace.

This week's menu:
  • Monday- spaghetti with salad
  • Tuesday- leftovers for me, Hubby is going out with a friend
  • Wednesday- chicken strips, rice pilaf, corn, and rolls
  • Thursday- fend for myself, Hubby has a work dinner meeting
  • Friday- pizza night, YAY!
  • Saturday- going to see the last Harry Potter movie and out to dinner (no cooking for me)
  • Sunday- hamburgers and hot dogs on the grill with french fries
Recipe of the week:
  • Cheesy Veggie Omelet
What you need:
3 eggs
2 Tbsp. milk
1/3 cup cheese (any kind you like)
2 Tbsp. diced fresh tomato
2 Tbsp. diced fresh pepper (green or any mild flavored assortment)
2 Tbsp. onion, if desired
1/3 cup thawed frozen spinach (all excess water drained off)

Instructions:
1. Beat eggs and milk together until well blended. Add the rest of the ingredients and mix well.
2. Heat frying pan to medium high heat. Pour in all ingredients.
3. Let cook on one side until edges begin to brown and pull away from pan.
4. Flip over and cook on other side for about 2-3 minutes or until done to your satisfaction.

  • Monday- home with kids, clean up, work
  • Tuesday- appt in the morning, home with kids, work
  • Wednesday- home with kids, work
  • Thursday- home with kids, work
  • Friday- something fun with kids, no work
  • Saturday- busy, busy day! Meet my best friend for coffee, have lunch with some friends here from Germany, dinner and a movie with Hubby and our nephew and his girlfriend.
  • Sunday- church and rest from Saturday
